Description
A festive cranberry curd tart with a buttery crust and a vibrant sweet-tart filling. Perfect for holidays, this dessert is simple, elegant, and guaranteed to impress.
Ingredients
2 cups fresh cranberries (or frozen, thawed)
1 cup granulated sugar
3 large eggs
½ cup unsalted butter, cubed
1 pre-baked tart crust (9-inch)
1 tsp vanilla extract
Pinch of salt
Optional garnish: sugared cranberries, whipped cream, or powdered sugar
Instructions
1. In a saucepan, cook cranberries with ½ cup sugar and 2 tbsp water until berries burst.
2. Blend the mixture until smooth, then strain to remove skins.
3. Return strained cranberry puree to the saucepan.
4. Whisk in eggs, remaining sugar, and butter cubes over medium heat.
5. Cook while stirring constantly until thickened (curd coats the back of a spoon).
5. Remove from heat, stir in vanilla and salt.
6. Pour curd into prepared tart crust and smooth the top.
8. Chill in the fridge for at least 2–3 hours until set.
9. Garnish with sugared cranberries or whipped cream before serving.
Notes
You can use frozen cranberries if fresh aren’t in season.
Make the tart a day ahead for easier serving.
For a shinier finish, brush with warm apricot jam before chilling.
