Description

Air fryer breakfast burritos offer a handheld, restaurant-quality combo of crispy hash browns, fluffy eggs, and protein, cooked to perfection in minutes. These easy, customizable burritos are ideal for busy mornings and offer both convenience and flavor.


Ingredients

Frozen Hash Browns, 2 cups
Large Eggs, 6
Milk, 1/4 cup
Unsalted Butter, 2 tablespoons
Kosher Salt, 1 teaspoon
Black Pepper, 1/2 teaspoon
Flour Tortillas, 4 large
Cheddar Cheese, 1 cup shredded
Turkey Bacon, 4 slices


Instructions

Preheat the air fryer to 375°F (190°C).
In a mixing bowl, lightly beat the eggs with the milk, salt, and pepper.
Heat the butter in a non-stick pan on the stove until melted, then pour in the egg mixture.
Cook the eggs just until they set but remain soft, about 2 minutes.
While the eggs cook, add the frozen hash browns to the air fryer basket and spray them lightly with oil. Cook for 7 minutes.
Remove the hash browns and let them cool slightly.
In the same pan, cook the turkey bacon until crispy.
In each tortilla, place a portion of hash browns, 1/4 of the scrambled eggs, 2 slices of bacon, and top with cheddar cheese.
Spray the air fryer basket with a little oil to prevent sticking, then wrap each burrito in foil or parchment paper and place in the basket.
Cook in the air fryer for 3 minutes, just until the tortillas are slightly toasted and the cheese melts slightly.
Remove and serve warm.

Notes

For a vegetarian version, skip the turkey bacon or replace it with sautéed mushrooms or tofu.
For a vegan version, substitute the eggs with scrambled tofu and use vegan cheese.
Feel free to add diced green chilies or avocado for extra flavor.
