Ingredients
3 medium Carrots
2 medium Zucchini
2 medium Sweet Potatoes
2 tablespoons Olive Oil
1 teaspoon Salt
1/2 teaspoon Pepper
1 teaspoon Paprika
Instructions
Wash and dry carrots, zucchini, and sweet potatoes
Slice vegetables into 1/8-inch rounds using a sharp knife or mandoline
Pat slices dry with paper towels to remove excess moisture
In a large bowl, toss vegetable slices with olive oil, salt, pepper, and paprika until fully coated
Arrange chips in a single layer in the air fryer basket (work in batches if needed)
Air fry at 375°F (190°C) for 10 minutes, flip, and cook 8-10 more minutes until golden and crispy
Cool slightly before serving to maintain crispness
Notes
Use mandoline for uniform slices and even crisping
Add paprika gradually if preferring mild flavor
Best served with Greek yogurt ranch or mild salsa
Store in airtight container up to 2 days
