Description
A vibrant, nutrient-packed salad blending creamy avocados, sweet mangoes, tangy lime dressing, and fresh herbs. Perfect as a light main dish or refreshing side.
Ingredients
2 ripe avocados, diced
2 ripe mangoes, diced
1 red bell pepper, diced
¼ red onion, finely chopped
1 cup cherry tomatoes, halved
¼ cup chopped cilantro
2 tablespoons olive oil
Juice of 2 limes
Salt and pepper to taste
Instructions
Rinse all produce in cold water.
Dice avocados and mangoes into 1-inch cubes.
Chop pepper, onion, and tomatoes into uniform pieces.
Add cilantro to the bowl and toss gently.
Whisk olive oil and lime juice into a dressing (add ½ tsp sea salt if desired).
Pour dressing over salad and mix carefully to coat.
Notes
Substitute grape tomatoes if cherry tomatoes are unavailable.
Use avocado oil for a citrus-friendly alternative.
Add thinly sliced jalapeño (optional) for heat.
Toss dressing just before serving to prevent avocados from browning.
Store in an airtight container up to 2 days (best fresh).
