Ingredients
1 pound sirloin steak, cut into 1-inch cubes
1 pound Brussels sprouts, halved
3 tablespoons extra virgin olive oil
6 cloves garlic, minced
2 tablespoons balsamic vinegar
1 tablespoon Italian seasoning
1/3 cup dried cranberries
1/3 cup crumbled blue cheese or goat cheese
Kosher salt to taste
Freshly cracked black pepper to taste
Instructions
Preheat your oven to 400 degrees Fahrenheit.
Place the halved Brussels sprouts on a large rimmed baking sheet.
Drizzle sprouts with two tablespoons of olive oil and season with salt and pepper.
Roast the sprouts for 15 minutes until starting to char.
While sprouts roast, toss the cubed sirloin with the remaining olive oil, garlic, and Italian seasoning.
Move the sprouts to one side of the pan and add the seasoned steak in a single layer.
Roast for another 10 to 12 minutes until steak reaches desired doneness.
Remove from the oven, drizzle everything with the balsamic vinegar, and toss to coat.
Top with dried cranberries and crumbled cheese before serving.
Notes
Ensure the steak is cut into uniform cubes to guarantee even cooking. If you prefer a milder flavor, swap the blue cheese for goat cheese or feta. For a fresh touch, garnish with a sprinkle of fresh parsley.
