Ingredients
Skinless boneless chicken thighs (15 oz
Salt (1 tsp, for marinade
Greek yogurt (1 tbsp) or buttermilk
Butter (3 tbsp total), grass-fed if possible
Heavy cream (2 cups), full-fat for best texture
Parsley (for garnish)
Garam masala
Black pepper
Vegetable oil (for searing)
Tomato sauce
Instructions
Mix chicken with salt and yogurt in a bowl
Let rest while preheating pan
Sear chicken in vegetable oil until golden
Transfer chicken to a clean plate
In same pan, add butter and cook aromatics
Scrape browned bits into the sauce
Add tomato sauce and simmer
Return chicken to pot
Pour in heavy cream, stir to combine
Season with black pepper and garam masala
Add remaining butter and stir
Finish with parsley garnish

Use skinless thighs for moist texture
Don’t rush the sauce simmering step
Stir cream into sauce slowly
Taste before adding extra butter
