Description

A vibrant and flavor-packed Cajun-inspired dish featuring succulent shrimp and smoky chicken andouille sausage finished with crisp-tender bell peppers. This high-protein meal is prepared in under 30 minutes, utilizing fresh aromatics, zesty lemon, and savory seasonings to create a perfect weeknight dinner that is both lean and deeply satisfying.

Ingredients

Scale

1 tablespoon extra virgin olive oil
0.5 cup red onion, thinly sliced
1 cup red bell pepper, sliced
1 cup yellow bell pepper, sliced
1 teaspoon garlic, freshly minced
Salt and black pepper to taste
2 teaspoons Cajun seasoning
1 pound smoked chicken andouille sausage, sliced
0.5 pound shrimp, peeled and deveined
0.25 cup low-sodium chicken broth
2 teaspoons fresh lemon juice
1 tablespoon fresh parsley, chopped

Instructions

Heat olive oil in a large pan over medium-high heat.
Add red onion, red bell pepper, and yellow bell pepper to the pan.
Sauté for 4-5 minutes until vegetables are tender-crisp.
Stir in garlic and cook for 30 seconds until fragrant.
Season the vegetables with salt, pepper, and Cajun seasoning.
Add the sliced chicken sausage and cook for 3-4 minutes to brown.
Add the shrimp and cook until pink and opaque.
Deglaze the pan with chicken broth and lemon juice, scraping bits from the bottom.
Simmer for 1 minute to coat everything in the sauce.
Garnish with fresh parsley before serving.

Notes

Ensure the chicken sausage is fully cooked through before adding the shrimp. For more heat, add a pinch of cayenne or red pepper flakes. Serve over cauliflower rice or brown rice for a complete meal.
