Description
A quick, customizable Mexican dish with tender chicken, melted cheese, and sautéed vegetables in warm tortillas, fried until crispy. Ideal for bold, handheld Mexican comfort food.
Ingredients
2 cups cooked chicken breast (shredded or diced)
1 cup shredded mozzarella
1 cup shredded cheddar
4 large flour tortillas
1 cup bell peppers
1/4 cup onion
2 tbsp olive oil or butter
1 tsp garlic powder
1 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp chili flakes (optional)
Instructions
Preheat a skillet over medium heat
Combine shredded chicken, garlic powder, paprika, salt, black pepper, and chili flakes in a bowl
Heat 1 tbsp oil/butter in skillet, sauté bell peppers and onion until tender
Place half of the seasoned chicken and cheese in the center of a tortilla
Cover with remaining veggies and cheese from the skillet
Top with remaining tortilla, press gently
Apply 1 tbsp oil/butter to the top of the sandwich
Flip and cook until golden and crispy
Notes
Use sweet red onion for milder flavor
Swap with whole wheat/corn tortillas for gluten-free
Try avocado or salsa as toppings
Store leftovers in an airtight container for 3 days
Freeze assembled uncooked quesadillas between wax paper for 2 months
