Chili-Lime Beef & Sweet Potato Stew

A robust, hearty one-pot meal that perfectly balances spicy chili flavors with the natural sweetness of tender roasted sweet potatoes. 1 tbsp olive oil
1 yellow onion, finely diced
1 red bell pepper, diced
3 cloves garlic, minced
2 cups sweet potatoes, peeled and small diced
1 lb lean ground beef
2 tbsp chili powder
1 tbsp cumin
1 tbsp smoked paprika
1 tsp dried oregano
1 tsp onion powder
1 tsp garlic powder
1/2 tsp cayenne pepper
1 tbsp tomato paste
2 cans (14.5 oz each) fire-roasted tomatoes
1 can black beans, drained and rinsed
1 can chili beans, with sauce
1 cup low-sodium chicken stock
Juice of 1 fresh lime
Salt and black pepper to taste


Instructions

Heat olive oil in a large pot over medium-high heat until shimmering.
Add onion and bell pepper, sautéing for 5 minutes until soft.
Stir in garlic and cook for 30 seconds until fragrant.
Reduce heat to medium and add sweet potato chunks, cooking for 7-9 minutes.
Push vegetables to the side and brown the ground beef in the center of the pot, crumbling as you cook.
Stir in chili powder, cumin, paprika, oregano, onion powder, garlic powder, cayenne, and tomato paste, toasting for 2 minutes.
Add fire-roasted tomatoes and stir for 1 minute.
Pour in black beans, chili beans with sauce, and chicken stock.
Simmer on low for 30 minutes until potatoes are fork-tender and liquid has thickened.
Remove from heat, stir in fresh lime juice, and adjust seasoning with salt and pepper.

Notes

Substitute ground beef with 93/7 ground turkey for a lighter version. Serve topped with fresh cilantro or avocado slices. Store in airtight containers for up to 4 days for meal prep.
