Ingredients
8 oz pasta
2 tbsp olive oil
3 cloves garlic, minced
14.5 oz can diced tomatoes
4 cups spinach
1 tsp oregano
1 tsp salt
½ tsp black pepper
¼ tsp red pepper flakes (optional)
To taste Parmesan cheese
Instructions
Boil 4 qt salted water in a large pot
Cook pasta 1 minute less than package instructions
Reserve ½ cup pasta water, then drain
Heat olive oil in a 12-inch skillet over medium
Add minced garlic and cook 30 seconds to golden color
Pour in tomatoes and their juices
Add oregano, salt, pepper, and red pepper flakes
Simmer 5 minutes, stirring constantly
Add spinach and cook 3-4 minutes until wilted
Mix in cooked pasta and reserved water until well coated
Top with Parmesan (nutritional yeast optional for vegan)
