Crispy golden chicken breasts baked with marinara, mozzarella, and Parmesan. A 35-minute Italian-American comfort dish with three-step breading and juicy results.
Ingredients
Chicken breasts, 2 large
Flour, 1 cup
Eggs, 2 large
Breadcrumbs, 1½ cups
Parmesan cheese, ½ cup
Marinara sauce, 2 cups
Mozzarella cheese slices, 8
Fresh basil leaves, 12
Olive oil for frying
Garlic powder, 1 tsp
Italian seasoning, 1 tsp
Instructions
Preheat oven to 425°F (220°C)
Cut chicken breasts horizontally to ½” thickness
Season both sides with salt/pepper
Divide into 3 dishes: flour, whisked eggs with 1 tbsp water, and breadcrumb mixture with Parmesan, garlic powder, and Italian seasoning
Dredge chicken in flour, dip in egg wash, press into breadcrumbs
Heat oil in skillet until shimmering; fry 3-4 minutes per side until golden
Pat dry on paper towels
Layer marinara in baking dish, place chicken, and add sauce
Top with mozzarella slices
Bake 18 minutes until cheese blisters
Let rest 5 minutes
Garnish with basil
Serve with spaghetti
Notes
Chicken can be microwaved 1-2 minutes to remove moisture
Use room-temperature eggs for better coating
Almond flour works for gluten-free version
Gluten-free panko acceptable for breadcrumbs
