Instructions

Cut chicken breasts into thirds for uniform slices
Season chicken with salt, pepper, Italian seasoning, and garlic powder
Mix flour and Parmesan cheese in a shallow bowl
Heat olive oil in oven-safe skillet, add butter, and sear chicken slices until golden (4-5 minutes per side)
Add onions to the pan, toss with soy sauce. Cook over medium heat for 20 minutes, stirring occasionally
Sprinkle sugar over onions, add rosemary, thyme, garlic, and sage. Cook until onions are deeply caramelized (25 minutes)
Stir in beef broth and any chicken drippings. Simmer for 10 minutes to thicken the sauce
Transfer chicken to oven-safe dish, top with onion sauce and mozzarella cheese
Bake at 375°F until cheese bubbles and browns (8-10 minutes)
