Ingredients
2 cups cooked white rice (day-old preferred)
2 tablespoons olive oil (or avocado oil)
2 boneless, skinless chicken breasts
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon paprika
4 cloves garlic, minced (or 1 teaspoon garlic powder)
1 tablespoon butter
1 cup chicken broth (low-sodium optional)
½ cup heavy cream
½ cup grated Parmesan
½ cup shredded mozzarella
¼ small onion, finely chopped
1 cup steamed broccoli or green beans
Instructions
Preheat oven to 450°F (230°C)
Toss chicken breasts with olive oil, salt, pepper, paprika, and half the garlic in a large oven-safe skillet
Roast for 15 minutes until golden
Reduce heat to medium, add butter, then sauté onion and remaining garlic until soft
Stir in rice, broth, cream, Parmesan, and mozzarella until thickened
Top with broccoli or green beans and simmer 5 minutes
Let rest 5 minutes before serving
