It is an ideal healthy weeknight meal that brings the essence of coastal Greek cooking to your dining table with minimal cleanup.
Ingredients
4 chicken thighs (skin-on)
4 cloves garlic, minced
2 tablespoons olive oil
2 cups cherry tomatoes, halved
1 cup Kalamata olives, pitted
1 cup feta cheese, crumbled
2 teaspoons dried oregano
1 piece lemon zest, freshly grated
Salt and black pepper to taste
Instructions
Pat chicken thighs dry with paper towels to ensure crispy skin.
Season chicken pieces on both sides with salt, pepper, and dried oregano.
Heat olive oil in a large skillet over medium heat until shimmering.
Place chicken skin-side down in the skillet and sear for 5-7 minutes until deep golden brown.
Flip chicken and add garlic, cherry tomatoes, and Kalamata olives to the pan.
Cook until tomatoes begin to soften and burst, about 5-8 minutes.
Reduce heat, cover, and cook until chicken is cooked through, approximately 10 minutes.
Top with crumbled feta and lemon zest before serving directly from the skillet.
Notes
Use avocado oil instead of olive oil for higher heat tolerance if preferred. If you enjoy a sharper bite, swap Kalamata olives for green olives. Fresh oregano can be substituted for dried by doubling the quantity.
