810 ounces Halloumi cheese, sliced into half-inch slabs
1 small seedless watermelon, cut into half-inch cubes or triangles
2 Persian cucumbers, thinly sliced
0.25 cup red onion, thinly sliced
0.5 cup fresh mint, divided
2 tbsp fresh lime juice
12 tbsp hot honey
1 pinch kosher salt
Olive oil for brushing


Instructions

Remove the rind from the watermelon and cut the fruit into bite-sized squares or triangles.
Combine lime juice, hot honey, and a pinch of kosher salt in a small bowl.
Mince half of the fresh mint leaves and whisk them into the dressing until well combined.
Brush a grill pan or outdoor grill lightly with olive oil and heat over medium-high heat.
Place halloumi slices on the hot surface and sear for 1-2 minutes per side until golden brown grill marks appear.
Assemble the salad by layering watermelon, sliced cucumbers, and red onion on a platter.
Top the salad with the warm grilled halloumi.
Drizzle the lime and hot honey vinaigrette over the top.
Garnish with the remaining whole fresh mint leaves and serve immediately.

Notes

Ensure the halloumi is patted dry before grilling to achieve a better sear. For the best texture, keep the watermelon chilled until the very last moment before serving.
