Ingredients

Scale

1 pound ground beef (80/20 lean)
1 clove garlic, minced
1/4 cup white onion, chopped
1/2 teaspoon chili powder
2 tablespoons tomato paste
12 mini flour tortillas
1 cup sharp cheddar cheese, shredded
1/2 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/8 teaspoon cayenne pepper
Salt and black pepper to taste

Instructions

Preheat your oven to 350°F and line two large sheet pans with parchment paper.
Brown the ground beef and chopped onion in a large skillet over medium heat until the onion softens.
Add minced garlic to the skillet and sauté for 2 minutes until fragrant.
Stir in the chili powder, oregano, paprika, onion powder, garlic powder, cumin, cayenne, salt, pepper, and tomato paste until thoroughly combined.
Lay the mini flour tortillas on the sheet pans.
Place a small amount of shredded cheese in the center of each tortilla, followed by the beef mixture.
Fold the tortillas in half to create the taco shape.
Bake for 15 minutes or until the shells are golden and crisp.
Remove from the oven and serve immediately.

Notes

Substitute corn tortillas for a gluten-free option. Ensure the beef is not too fatty to prevent soggy shells. Serve with avocado lime crema or fresh cilantro for extra flavor.
