Ingredients

Large Eggs 8
Cottage Cheese 1 cup (200g)
Salt 1 tsp
Black Pepper ½ tsp
Frozen Hash Browns 3 cups (270g)
Feta or Cheddar Cheese 3 oz (85g)
Instructions
Preheat oven to 350°F (175°C)
Grease 6 glass containers using oil spray
Divide frozen hash browns evenly between containers
Press hash brown mixture into compact layer
Brown turkey sausage in skillet over medium heat
Drain excess fat before use
Whisk eggs, cottage cheese, salt, and pepper until lump-free
Opt: Use immersion blender for ultra-smooth texture
Distribute cooked sausage across hash brown bases
Pour egg mixture evenly into each container
Sprinkle equal portions of feta/cheddar on top
Bake 25 minutes until center is firm and edges brown
