A savory and tender Korean classic, this beef bulgogi uses a fruit-based marinade to achieve a perfect melt-in-your-mouth texture. Featuring thinly sliced ribeye or sirloin stir-fried with onions and carrots, this dish balances deep umami notes with a subtle sweetness. It is a quick, restaurant-quality meal perfect for busy weeknights, best served over steamed rice or fresh lettuce wraps.
Ingredients
14 oz / 400g thinly sliced ribeye or sirloin
1 stem scallions, sliced (separate white and green parts)
1/2 large onion, sliced
1/2 medium carrot, sliced diagonally
1 tbsp cooking oil (peanut or vegetable)
1/2 tbsp toasted sesame seeds
3 tbsp soy sauce
1 1/2 tbsp packed brown sugar
1 tbsp rice vinegar mixed with 1/2 tsp sugar (mirin alternative)
1/2 tbsp toasted sesame oil
3 tbsp grated apple (Nashi or Gala)
2 cloves garlic, minced
1/2 tsp ground ginger
1/4 tsp black pepper
Instructions
Blot the beef slices dry with paper towels.
In a small bowl, whisk together soy sauce, brown sugar, mirin alternative, sesame oil, grated apple, garlic, ginger, and black pepper.
Place beef in a bowl, pour the marinade over it, and massage gently to coat.
Cover and refrigerate for at least one hour.
Heat cooking oil in a large skillet or wok over high heat.
Add the marinated beef and sear until caramelized edges form, about 3-4 minutes.
Add the onions, carrots, and white parts of the scallions; stir-fry for 1-2 minutes until vegetables are crisp-tender.
Remove from heat, garnish with green scallion parts and toasted sesame seeds, and serve hot.
Notes
Use very thinly sliced beef, ideally partially frozen, for the best texture. Do not overcrowd the pan; cook in batches if necessary to ensure a proper sear rather than steaming the meat. Store leftovers in an airtight container for up to 3 days.
