1 1/2 lbs chicken thighs
1 lb fresh asparagus, woody ends trimmed
3 tbsp olive oil
5 cloves garlic, minced
1/3 cup chicken broth
1 tsp fresh lemon zest
2 tbsp fresh lemon juice
3 tbsp ghee or butter
1 tsp honey
Salt and pepper to taste
Garlic powder to taste
Paprika to taste


Instructions

Pat the chicken dry with paper towels and season with salt, pepper, garlic powder, and paprika.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Sear the chicken for 4 to 5 minutes per side until a deep golden crust forms, then remove and set aside.
Add the remaining olive oil and asparagus to the skillet, sautéing until crisp-tender, then remove.
In the same skillet, melt the ghee (or butter) and add the minced garlic, cooking until fragrant.
Stir in the chicken broth, lemon juice, lemon zest, and honey, simmering for 2 minutes to create a light sauce.
Return the chicken and asparagus to the skillet, tossing gently to coat in the sauce until heated through.

Notes

Ensure the chicken is patted completely dry for the best sear. If using chicken breasts, reduce the searing time slightly to maintain moisture. Avocado oil is an excellent dairy-free substitute for ghee or butter.
