Description
Tender grilled chicken breasts marinated in fresh lemons, garlic, rosemary, and thyme for bold Mediterranean flavor. The citrus-herb blend keeps the chicken juicy while the herbs add vibrant depth.
Ingredients
4 skinless boneless chicken breasts
1/4 cup extra virgin olive oil
2 lemons (juiced and zested)
4 garlic cloves (minced or 1 tsp garlic powder)
1 tbsp fresh rosemary (chopped)
1 tbsp fresh thyme (chopped or 1 tsp dried)
Salt (to taste)
Black pepper (to taste)
Instructions
Combine olive oil, lemon juice, garlic, rosemary, thyme, salt, and pepper in a large bowl
Zest both lemons directly into the bowl
Place chicken breasts in the marinade and coat thoroughly
Seal and refrigerate for 30 minutes minimum up to 2 hours
Heat grill to 375°F-400°F, oil the grate to prevent sticking
Grill chicken 6-7 minutes per side until internal temperature reaches 165°F
Transfer to a plate, tent with foil and rest for 5 minutes
Slice against the grain and serve warm
Notes
Use a digital thermometer for precise doneness
Crisp rosemary sprigs add texture to finished dish
Marinating longer than 2 hours risks over-tenderizing
Substitute dried thyme for 1 tsp if fresh is unavailable
Store leftovers in an airtight container for up to 3 days
