1.52 lbs Atlantic salmon fillets, portioned
6 tablespoons unsalted butter, melted
1 lb fresh green beans, ends trimmed
0.5 lb broccoli florets, chopped
1 lb carrots, peeled and sliced
3 cloves garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon Italian seasoning
1 teaspoon coarse salt
0.5 teaspoon black pepper
1 tablespoon olive oil (for veggies)


Instructions

Preheat your oven to 400 degrees Fahrenheit.
Grease a large rimmed baking sheet with olive oil or non-stick spray.
In a large bowl, toss green beans, broccoli, and carrots with olive oil, salt, and pepper.
Spread the vegetable mixture across the baking sheet and roast for 15 minutes.
