Description

This sophisticated Mediterranean-inspired dish features fresh, flaky halibut fillets topped with an umami-packed blend of sundried tomatoes, creamy mayonnaise, and aromatic garlic. The mayonnaise acts as a protective barrier during the high-heat roasting process, ensuring the fish remains incredibly tender and moist. With minimal prep time and professional results, this elegant seafood entree is perfect for an easy yet impressive dinner.

Ingredients

Scale

1 pound fresh halibut fillets
3 tbsp sundried tomatoes, finely chopped
3 tbsp mayonnaise
2 garlic cloves, minced
1/4 tsp dried oregano
1 tbsp fresh basil, chopped
Kosher salt to taste
Fresh black pepper to taste

Instructions

Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).
In a small bowl, mix the sundried tomatoes, mayonnaise, minced garlic, and dried oregano until well combined.
Line a baking sheet with parchment paper.
Place halibut fillets on the baking sheet with skin side down.
Season the fish lightly with kosher salt and black pepper.
Spread the mayonnaise and sundried tomato mixture evenly over the surface of each fillet.
Bake for 15 to 17 minutes until the topping is golden brown and the fish flakes easily with a fork.
Garnish with fresh basil before serving.

Notes

Ensure the halibut fillets are roughly 1.5 inches thick for even cooking. Using full-fat mayonnaise is recommended for the best flavor and moisture retention. The fish is done when it reaches an internal temperature of 145 degrees Fahrenheit.
