1 large head cauliflower, cut into small florets
1 large white or yellow onion, halved
4 garlic cloves, unpeeled
2 tablespoons avocado oil
1 teaspoon ground cumin
1/2 teaspoon ground coriander
4 cups vegetable broth (low-sodium recommended)
Salt and pepper to taste
Fresh thyme for garnish

Instructions

Preheat your oven to 425F (220C).
Toss cauliflower florets on a baking sheet with avocado oil, cumin, coriander, salt, and pepper.
Place onion halves cut-side down on the same sheet and add the garlic cloves in their skins.
Roast for 35 minutes until the cauliflower is golden brown and tender.
Remove the onion skin and peel the roasted garlic cloves from their skins.
Place the roasted vegetables and garlic into a high-powered blender.
Add the vegetable broth and blend until the consistency is completely smooth and emulsified.
Transfer to a pot to gently warm through if needed, adjusting seasoning with salt and pepper.
Serve hot, garnished with fresh thyme and optional toasted almonds.

Notes

Ensure the onions and cauliflower are golden brown to achieve the best flavor. If the soup is too thick, add extra broth by the tablespoon until you reach your desired consistency. Store in an airtight container in the refrigerator for up to 3 days.
