Ingredients

2 cups cherry or grape tomatoes, thinly sliced
3 cloves garlic, divided
3 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1/3 cup fresh basil, chiffonade cut
1 large whole wheat baguette, sliced into 16 pieces
Salt to taste
Cracked black pepper to taste
Balsamic glaze for garnish (optional)


Instructions

Slice the tomatoes and transfer to a mixing bowl.
Combine tomatoes with two minced garlic cloves, one tablespoon olive oil, balsamic vinegar, fresh basil, salt, and pepper.
Set the mixture aside for at least 10 minutes to marinate.
Preheat the oven to 400 degrees F.
Brush both sides of the baguette slices with the remaining olive oil.
Toast the bread in the oven until golden brown, approximately 10 minutes.
Rub the remaining raw garlic clove over the toasted bread surfaces.
Top each slice with the marinated tomato mixture and drizzle with balsamic glaze if desired.
