Ingredients
Shortcrust Pastry
2 sheets (320g each), pre-chilled
Oil Spray
As needed (olive oil or butter substitute)
Tomato Puree
1 tbsp
Beef Gravy Granules
1 heaped tbsp
Cheddar
90g (3oz) grated
Ground Beef
500g (17.5oz)
Mushrooms
200g (7oz), sliced
Carrots
2 medium, grated
Onion
1 large, chopped
Garlic
2 cloves, minced
Milk
150ml (5fl oz)
Butter
60g (2.1oz), softened
Boiling Potatoes
3.2oz (900g), peeled and diced
Cheese
30g (1oz) cream cheese or crème fraîche (optional)
Nutmeg
Pinch
Salt and pepper
To taste
Beef Stock
400ml (13.5fl oz)
Red Wine
60ml (substituted with additional beef stock)
Instructions
Preheat oven to 190°C (375°F). Line 12 muffin tins with parchment circles
Heat oil in pan, sauté onion, carrots, mushrooms, garlic for 10 minutes
Add ground beef; brown thoroughly
Stir in tomato puree and beef stock (instead of wine), deglazing the pan
Cool filling 15 minutes
Boil potatoes until tender; drain and shake in colander
Mix potatoes with butter, milk, cheese, nutmeg, salt, pepper
For each pie: place 2 tbsp filling in pastry-lined tin, top with 2 tbsp mash
Bake 25-30 minutes until golden
Notes
Use sharp cheddar for stronger flavor
Optional: add kale or peas to the filling
Store leftovers in airtight containers up to 3 days
