Ingredients
2 large russet potatoes
1 tablespoon olive oil
1 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika

Instructions
Peel potatoes and cut into 1/4-inch matchstick fries
Sort fries by size for even cooking
Rinse in cold water to remove surface starch, then drain
Soak fries in cold water for 25–30 minutes
Pat completely dry with paper towels or a clean kitchen towel
Heat air fryer to 380°F during the final 10 minutes of prep
Toss fries with olive oil, salt, garlic powder, paprika, and pepper in a bowl
Arrange fries in a single layer in the air fryer basket
